COOL WHIP Everyday Treats! Easy cake mix cookies!


I really am not much of a dessert maker. I usually just make sweets on a whim or for special occasions. I sometimes get the urge to make the cookies so I decided for this Cool Whip challenge I would find a good cookie recipe. I like my desserts to be quick and simple to make. With a toddler who is into anything and everything it makes it hard to spend a long time working on something elaborate in the kitchen.

That is where these cookies come in! This is a great and easy recipe that I found to make using COOL WHIP Whipped Topping. These cookies are almost like a fruity version of crinkle cookies, which is a chocolate cookie rolled in powdered sugar before it is baked. I bet you could replace the fruity cake mix in this recipe with a box of chocolate and it would be just as delicious! The recipe I originally found used lemon cake mix. I went to the store and I guess because of the holidays they were out of a few types of cake mix. So, I improvised. I decided to use orange cake mix instead. I don't regret it!

I like the fruitiness in these cookies though. It makes them perfect for Spring or Summer.  I would love to make these cookies for a barbecue or party. The cookies are slightly messy (because the powdered sugar), soft, chewy but the outside has a crunch and of course, they are sweet. My mom mentioned that she thought they are pretty sweet. She is a diabetic. To remedy this you could absolutely use COOL WHIP sugar free whipped topping and they wouldn't be quite as sweet.




Here's what you need:
2 eggs
4 oz of COOL WHIP
1 box of lemon or orange cake mix OR even chocolate
Powdered sugar for rolling the dough in (1/2 a cup or more)

Directions:
1. Beat the eggs and the COOL WHIP together.
2. Beat in the cake mix. I used orange cake mix. The mixture will be very thick so don't worry when it is.
3. Form into balls. I used a small ice cream scoop to help me get them to a proportional size throughout.
4. Roll the balls of dough in the powdered sugar.
5. Bake at 350°F on a greased cookie sheet for 8 to 10 minutes on the top rack. Mine took 10.


Before I scraped the bowl, obviously. See? It is very thick. I may or may not have tasted the batter. It tastes like a creamsicle. Mmm.

 Rolling the dough in sugar and getting some on my pregnant belly. ;)
